Special powder, based on milk derivatives, for making warm pudding

Available in two types

  • for machine use with a cream cooking machine (this type has a firmer binding)
  • one for manual use (cooking pot)

Characteristics

  • The end result is a softly vanilla-flavored, fine, creamy pudding
  • Bake-stable
  • After cooling, the pudding has a short, cooked texture and can be gently whipped again with a wire whisk.
  • Packaged in 20 kg bags.

Manual use: recipe + method

  • 1 liter of water
  • 400 g CP EXPRESS
  • Bring the water to a boil
  • Pour the CP EXPRESS pudding powder into the boiling water
  • Stir well with a hand whisk and let it boil briefly
  • Cool as quickly as possible

Machine use: recipe + method

  • 1 liter of water
  • 500 to 575 g CP EXPRESS (specially for cooking appliances)
  • Pour water and CP EXPRESS into the cooking appliance
  • Turn on the mixer of the cooking appliance to mix the powder well with the water.
  • Bring the composition to a boil (85 to 92 °C or according to machine setting)
  • Allow to cool with interval until see machine setting (according to HACCP between 10 à12 °C)
