Method for butter cream
Make a mix from:

  • 700 g butter cream mix
  • 300 g water
  • Mix this blend with the hand whisk and leave to rest until the sugar has completely dissolved.
  • Beat 1000 g of butter or margarine in the machine using a wire whisk.
  • Then pour the mix into the smoothly whipped butter and whisk at the highest setting for 5 minutes.


  • To make the sugar in the mix dissolve faster, use hot or lukewarm water from the tap.
  • To make the butter cream sweeter, add extra sugar to the mix.

Method for making pâte à bombe
Make a mix from:

  • 700 g butter cream mix
  • 300 g water
  • Whisk for 5 minutes at the highest setting using the wire whisk.


This very airy mixture can then be used as a base to add to:
Bavarois, ice cream, etc.
