Method for crème au beurre

Make a composition of:

  • 700 gr. Crème au beurre mix
  • 300 gr. water
  • Mix this composition briefly with a hand whisk and let it rest until the sugar is completely dissolved
  • Beat 1000 gr. butter or margarine until smooth with the wire whisk
  • Then pour the composition into the smooth butter and whisk on the highest speed for 5 minutes

This very airy mass can then be used as a base to add to Bavarois, ice cream, etc.

TIPS

  • To dissolve the sugar in the composition faster, use lukewarm or warm tap water
