Special sugar-free biscuit powder for making biscuits using the traditional method

Characteristics

  • Volumax produces a very light biscuit that stays soft for a long time
  • Biscuit made with Volumax has a slightly woollier texture than biscuit made with quick-biscuit powders
  • Also very suitable for making profiteroles
  • Volumax can be used in combination with a stabilizer

Cold preparation

Recipe

  • 250 gr Volumax
  • 500 gr sugar
  • 4 eggs

Method

  • Whisk the eggs and sugar until stiff, then add the sifted biscuit powder
  • Gently fold the Volumax in with a spatula.
  • Optionally add a stabilizer while whisking.

  • 250 gr flour
  • 500 gr sugar
  • 4 eggs

Method

  • Whisk the eggs and sugar and heat to 37°C, then let cool while whisking
  • Mix the Volumax biscuit powder with the flour and sift.
  • Gently fold the powder into the whipped eggs with a spatula.
  • Bake at 180 °C.

Recipe

  • 50 gr Volumax
  • 50 gr flour
  • 100 gr butter
  • 200 gr water
  • 4 eggs

Method

  • Bring the water and butter to a boil.
  • Mix the flour and Volumax and add to the freshly boiled water.
  • Stir the entire mixture until smooth, and while cooling, add the eggs and continue stirring until smooth
  • Bake at 180 °C.
